These cookies are sure to delight even the pickiest of eaters. It has irresistible pumpkin and peanut butter in it.
Here are the ingredients for buckwheat and pumpkin cookies:
- 2 cups of buckwheat
- 1 cup of oats
- 1 cup pure canned pumpkin (not pumpkin pie mix)
- 1 cup all natural peanut butter
- 2 eggs
Preheat oven to 350 degrees. In medium sized bowl, mix the buckwheat and oats. In another medium sized bowl, mix the pumpkin, peanut butter and eggs. Add mixture to dry ingredients and form into dough. Dust counter with buckwheat. Roll the dough onto the dusted counter. Roll dough out until it is about 1/4″ thick and cut into desired shapes. Bake for 20 – 25 minutes.
